Ovnsbakt pakora – sunne grønnsaks snacks

Pakora er indisk rett bestående av grønnsaker i kikertmel og krydder, som formes til små baller og friteres. De fleste grønnsaker kan brukes i pakora, så lag gjerne disse dersom du har rester av grønnsaker som må brukes.

Kikertmel finner du i indiske butikker der det kalles Gram Flour eller Besan. Dersom du ikke får tak i dette, så kan du bruke vanlig hvetemel. Pakora er enkelt å lage, og veldig sunne, særlig om du steker dem i ovnen i istedenfor å fritere dem. Smaken blir den samme, men de blir hakket sprøere i frityr fremfor bakeovnen.

Pakora kan serveres som en forrett, siderett, en snack i mellom måltidene eller som frokost. Server med en enkel dip av naturell yoghurt, mynte og sitron.

Sprø pakora med grønnsaker

Måltid: Lunsj Porsjoner: ca 15 pakora

Ingredienser

  • 200 gram hodekål
  • 2 gulrøtter små
  • 200 gram blomkål
  • 1 fedd hvitløk presset
  • 1/2 rødløk
  • 1 chilli finhakket
  • 1 ss rårevet ingefær
  • 1,2 dl mel kikertmel eller hvetemel
  • 0,5 dl vann
  • 1 ts gurkemeie
  • 2 ts garam masala
  • 1,5 ts salt
  • 1 ts pepper
  • 1 ts spiskummen

Slik gjør du

  1. Skjær alle grønnsakene i små og jevne biter og ha dem i en bolle
  2. Tilsett chilli, ingefær og krydder og bland godt sammen
  3. Ha i mel og bland sammen igjen
  4. Tilsett vann, litt av gangen. Blandingen skal være klissete, men henge sammen 
  5. Form små, grove baller av grønnsaksblandingen. Dette er en veldig klissete jobb, men absolutt verdt det
  6. Legg grønnsaksballene på et stekebrett og pensle dem med olje
  7. Stekes på 200 grader i ca 20 minutter, til de er gyldne og sprøe. Server med en enkel yoghurtdipp
